I’m taking a break from my regular scheduled programming to lighten things up and try something a little different. After all, everything is different now and I think we should all embrace it. I’m also going to do this blog 100% from my phone as I half heartedly watch “Gone With The Wind”
One of my favorite things to do when things were open, was to take myself out on “dates” and my favorite spot to go is The Uptown Lounge and I either get their signature Basil Martini

Or the El Diablo

This blog is about my craving for the El Diablo and my attempt of creating something similar. Now I must state upfront, NOTHING compares to the real El Diablo but this will do for now
The most important part of the El Diablo is the pepper infused tequila, so first select your tequila and peppers. I used the following:
1. Random tequila I found in my cupboards
2. One Habanero Pepper
3. One Serrano Pepper
4. One Jalapeno Pepper
5. One Tablespoon of Peppercorns

Once you have your ingredients in your sealed jar, store it in a cool, dark place for at least 24 hours before use.
Once your infused tequila is ready its time to get your mix on!

I don’t like super sweet or syrupy mixes so I like to use fresh lemon and lime and a little splash of Zing Zing!
Austin’s Diablo
1. 1/2 oz. Of infused tequila

2. 1/2 oz. Cantreau (you could also use triple sec,or grand marnier

3. 1 oz. Tequila – I prefer reposado, but you could use your favorite

4. 1/2 of a Lime
5. 1/2 of a Lemon
6. 1/2 oz. Zing Zang margarita mix

7. 4oz of seltzer water
Take ingredients #1-6 and mix them in a shaker or mix together in your glass, top (float) with seltzer and enjoy!
**Pro Tip: Use your lemon or lime to coat the rim of your glass. Place salt on a small plate and put the rim of the glass in the salt. Add lime to garnish
**fancy ass pro tip: cut a small slice of lime and roll it in Tajin🙌

Yes, the el Diablo at uptown is hard to beat but these do the trick!!!
